Sweet Potato Hash with Kale and Prosciutto

Sweet Potato Hash with Kale and Prosciutto

Serves 2 as main course and 4 as side

Ingredients

1 Tbsp. olive oil
1 onion, diced large
1 shallot, sliced
1 large sweet potato, cubed (about 2 cups)
½ cup water
4 slices prosciutto, diced
4 cups baby kale
¼ tsp. pink salt
1/8 tsp. black pepper
¼ tsp. dried basil

Directions

  1. In a 5-quart pan or cast iron skillet over medium heat, add olive oil, onion and shallot. Cook for 10 minutes.
  2. Add cubed sweet potato and water and cook for additional 10 minutes.
  3. When water has been cooked off, add prosciutto, kale and spices. Cook 10 more minutes until sweet potatoes are cooked through.
