Cauliflower has been having a moment in the spotlight for a while now – and for good reason! Like broccoli, cabbage and kale, it’s in the nutrient-dense family of cruciferous vegetables that are low in calories and high in vitamins and fiber. Plus, there are so many ways to enjoy cauliflower. (Have you tried it in a smoothie?) When roasted, cauliflower boasts a sweet nuttiness. Here, the natural flavors of yellow and purple varieties are enhanced with maple syrup, mild heat from sriracha and a touch of acidity from lime. This pretty side dish further extends the power of the mighty cauliflower.
Roasted Sweet & Spicy Maple Cauliflower

Ingredients
- 1 large head yellow cauliflower
- 1 large head purple cauliflower
- 1/3 cup plus 1 Tbsp. maple syrup
- 2 Tbsp. sriracha
- 2 Tbsp. olive oil
- Juice of half large lime
- Salt to taste
- Pepper to taste
- ½-1 tsp. sesame seeds
- 1 scallion sliced
Instructions

Preheat oven to 425 degrees F. Line large baking sheet with parchment paper.

In large mixing bowl, combine maple syrup, sriracha, olive oil and lime juice. Mix and season with salt and pepper. Set aside.

Cut each head of cauliflower into florets and add to mixing bowl. Toss gently to coat.

On baking sheet, arrange even layer of cauliflower. (Note: Use two baking sheets if needed. Do not overcrowd or add any excess sauce to pan as cauliflower will steam and not roast.)

Bake 20 minutes, flipping halfway through.

Increase oven temperature to 475 degrees and bake for 7-10 more minutes or until golden-brown.

Serve warm garnished with sesame seeds and sliced scallions.
Note: Add more or less sriracha based on heat preference.
