Sweet Spring Coleslaw

Sweet Spring Cole Slaw

Serves 4

Ingredients

3/4  cup Greek plain yogurt
2  Tbsp. balsamic vinegar
1/2  tsp. caraway seeds
1 medium head red cabbage, cored and thinly sliced
4 chives, finely chopped
1 cup dried cranberries
1 cup pumpkin seeds
1/4 tsp. sea salt
1/4 tsp. pepper

Directions

1. In a large bowl, combine yogurt, vinegar and caraway seeds; mix well. Add remaining ingredients; gently toss to combine.

2. Serve chilled.
