Turmeric-Spiced Quinoa Bowl with Avocado
Ingredients
2-½ cups water
1 cup uncooked quinoa
1 Tbsp. cumin powder
½ tsp. turmeric powder
1 tsp. salt
1 tsp. coconut oil
1 tsp. black pepper
Dash cayenne pepper
1 large cucumber, cubed
1 avocado, cubed
¼ cup fresh cilantro
¼ cup fresh parsley
Directions
- In medium-sized saucepan, combine water and quinoa. Bring water to a bowl, reduce heat to low, cover and simmer for 15 minutes or until water is absorbed.
- Stir in turmeric, cumin, salt and coconut oil and continue to cook, stirring occasionally, for about 3 minutes or until grains are soft and all is well combined.
- Transfer quinoa to large bowls and top with cucumber, avocado and herbs.
