Turmeric, an antioxidant all-star, gives this simple side dish a tasty kick while instantly upping its nutrition benefits. What’s even nicer? Toss in cubes of cucumber and avocado for complementary coolness and enough biteables to make this bowl a meal.

Turmeric-Spiced Quinoa Bowl with Avocado

Ingredients

2-½ cups water
1 cup uncooked quinoa
1 Tbsp. cumin powder
½ tsp. turmeric powder
1 tsp. salt
1 tsp. coconut oil
1 tsp. black pepper
Dash cayenne pepper
1 large cucumber, cubed
1 avocado, cubed
¼ cup fresh cilantro
¼ cup fresh parsley

Directions

  1. In medium-sized saucepan, combine water and quinoa. Bring water to a bowl, reduce heat to low, cover and simmer for 15 minutes or until water is absorbed.
  2. Stir in turmeric, cumin, salt and coconut oil and continue to cook, stirring occasionally, for about 3 minutes or until grains are soft and all is well combined.
  3. Transfer quinoa to large bowls and top with cucumber, avocado and herbs.
