This side dish is extremely versatile and can be served in a variety of ways. For catering to multiple guests, spoon this dip into a bowl and place on a platter with crackers, pita and sliced veggies. This salad also tastes great stacked between two slices of toasted bread with lettuce and tomato – or you can simply drop a large spoonful atop a bed of leafy greens.

Vegan Buffalo Chickpea Salad
Ingredients
- 2 cans chickpeas, drained & rinsed
- 1/4 cup red onion, chopped
- 1 stalk celery, chopped
- 2 green onions, chopped
- 1 Tbsp. fresh parsley chopped
- 1-2 Tbsp. hot sauce,
- 1/2 cup plain hummus
- 1/2 tsp. Vitacost Himalayan Pink Salt
- 1/2 tsp. black pepper
- 1 garlic clove, chopped
Instructions

In food processor, combine all ingredients and pulse until well combined and chunky (do not puree).

Spoon into bowl and transfer to refrigerator for 1 hour or overnight for best results.

Serve as a snack or appetizer with crackers and sliced veggies, or enjoy on a sandwich with lettuce and tomato.
