- 9 oz. jackfruit drained & shredded
- 1-2 avocados
- 1 zucchini sliced or diced
- 1 yellow squash sliced or diced
- 1-1/2 cups red orange, and/or yellow pepper, sliced or diced
- 1 cup red & purple cabbage shredded
- 2 Tbsp. extra virgin olive oil
- 2 tsp. chipotle hot sauce
- 1 Tbsp. nutritional yeast
- 2 limes freshly squeezed
- Cilantro dried or fresh, to taste
- 1/4 cup pumpkin seeds
Optional: 1 chayote squash, sliced or diced
Optional: grain-free chips, for topping
