Vegan Cashew Eggnog

Gluten-free gingerbread cookies? Check. No-bake apple pie? Check. What’s missing from your spread of healthy-foodie-approved winter staples? Eggnog, of course! You’ll want to check out this better-for-you vegan version because it’s made without dairy or eggs. Here, the creaminess comes from coconut butter and raw cashews. Be sure to soak the cashews for an extra creamy beverage!

Ingredients

5 Tbsp. Nutiva Coconut Manna
2 ½ cups of water
1/3 cup raw cashews
1 ½ Tbsp. Vitacost Maple Syrup
1 Tbsp. Nutiva Coconut Sugar
1 tsp. vanilla extract
1 tsp. ground nutmeg
1/8 tsp. Redmond Real Salt
1/8 tsp. ground cinnamon
1/8 tsp. ground cloves

Directions

  1. In a blender, combine all ingredients in and process until fully combined and smooth.

Notes:

  • Soak raw cashews for at least an hour for a creamier beverage.
  • If desired, top with a sprinkle of nutmeg or cinnamon.
