Mocha Fudge Muffins

Bring your senses to the breakfast table. It’s okay if not all your senses are awake just yet. As long as you can open one eye and operate a spoon, you can make mocha fudge muffins. Spiked with freshly brewed coffee, these morning risers are just what you need to come alive. (Plus, you can always brew a little extra to sip on while you wait.) Especially rousing is the aroma of cocoa and coffee coming together in one delightful sweet bread. It would be senseless not to try these.

Ingredients

1/2 cup almond flour
1/2 cup cocoa powder
1/2 cup sugar
1/4 cup coconut oil
1/2 cup brewed coffee
1 Tbsp. tahini

Directions

  1. Preheat oven to 350 degrees F and prepare a muffin pan with paper liners or coat with non-stick cooking spray.
  2. In a large bowl, combine all ingredients and stir until well combined.
  3. Pour batter into prepared muffin pan, filling each well at least 3/4 full.
  4. Bake 20 minutes, or until a toothpick comes out clean.
