Of all the great food pairings, chips and salsa are definitely high on the list of favorites. However, any party you’ve ever attended has probably had chips and salsa as a snack, so it can get a bit overdone. That’s why, when throwing your own bash, we suggest leaving out a dip that will really get guests munching excitedly. This recipe combines classic vegan cashew cheese with mild salsa for a dip unlike any you’ve ever dunked a chip or baby carrot into. Serve it alongside sliced raw veggies, your favorite organic tortilla chips or go the extra mile and add baked veggie chips, like these spicy carrot chips.
Ingredients
1 cup raw cashews, soaked several hours or overnight
1/4 to 1/2 cup nutritional yeast
1/2 chipotle powder or more, to taste
1/2 tsp. cumin powder
1 avocado, diced
16 oz. Simple Truth® Organic Salsa Medium
1/3 cup fresh cilantro, chopped
Directions
- Make cashew cheese. In blender, combine drained and rinsed cashews, nutritional yeast and a small amount of water. Blend until smooth and transfer 1 cup to medium-sized mixing bowl. Reserve remaining cashew cheese for another use.
- Stir cumin and chipotle powder into cashew cheese. Mix in salsa and fresh cilantro. Top with diced avocado.
