White Chocolate Chip Blondies

White chocolate doesn’t get enough exposure. Other than baked into a cookie with hazelnuts or topped with peppermint pieces in a seasonal bark, you’ll be hard-pressed to find this sweet ivory treat. But with a smooth, creamy texture that melts in your mouth, white chocolate deserves the spotlight once in a while. This blondies recipe puts the focus exactly where it should be – taste for yourself!

Blondies Recipe: White Chocolate with Protein

White Chocolate Chip Blondies

Makes 8 square blondies

Ingredients 

2/3 cup oat flour
½ cup almond meal flour
½ scoop vanilla protein powder
1/3 cup xylitol
¼ cup white chocolate chips
¼ cup Sweet Spreads White Chocolate Coconutter or a white chocolate peanut spread, melted
¼ cup plain Greek yogurt
2 Tbsp. sugar-free maple syrup
1 tsp. vanilla extract
1 tsp. butter extract
1 egg white

Directions

  1. Preheat oven to 350 degrees F and line a small square baking dish with parchment  paper.
  2. In a large bowl, whisk yogurt, white chocolate spread, vanilla and butter extracts, syrup and egg white until smooth.
  3. In a separate bowl, mix remaining ingredients.
  4. Add wet mixture to dry and stir until well combined.
  5. Pour batter into prepared baking dish and bake 25-30 minutes, or until a toothpick comes out clean.
  6. Let cool before slicing into 8 squares. Drizzle with more white chocolate spread, if desired, and enjoy!
