Bliss Bars? Stellar Squares? Whatever you end up calling your new secret recipe, everyone will call these better-for-you bars divine. Dried apricots, oats and shredded coconut are the star ingredients in these chewy bars. The tartness of apricot combines beautifully with the delicate sweetness of a layer of melted white chocolate on top. With their out-of-this-world taste, no one will guess how down to earth they are to make.

White Chocolate-Topped Apricot Oat Bars

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line 7x11 baking pan with parchment paper.
  3. In small bowl, mix 1 Tbsp. egg replacer with 2 Tbsp. water and let thicken for 1 minute.
  4. Mix together all bar ingredients, spoon into baking pan and smooth out.
  5. Bake 20 minutes.
  6. In double boiler, melt white chocolate with olive oil over medium heat for 5 minutes.
  7. Pour melted chocolate over apricot bars.
  8. Chill 30 minutes to one hour until chocolate is set. Cut into 12 bars.
