You can’t make eggnog without breaking a few eggs—and that’s totally OK. We can’t get enough of this seasonal staple. And, since this is the only time of the year to enjoy it, so we are taking advantage. In this recipe, we’re baking our favorite beverage into delicious whole wheat blondies. We’ve even added white chocolate chips for a truly delightful treat.
Ingredients
1 cup Bob’s Red Mill Organic Whole Wheat Pastry Flour
1/2 cup brown sugar
1/4 cup evaporated cane sugar
1 tsp. ground nutmeg
1 tsp. baking powder
1/4 tsp. salt
1 egg
1/2 cup butter, melted
2 Tbsp. bourbon, optional (can use brandy)
1 tsp. vanilla extract
1/2 cup white chocolate chips
Directions
- Preheat oven to 350 degrees F. Using parchment paper, line an 8×8-inch square baking pan.
- In a medium bowl, mix together pastry flour, nutmeg, baking powder and salt.
- In a large bowl, combine brown sugar, cane sugar and butter. Mix in egg, bourbon and vanilla. Then, mix in flour mixture and fold in chocolate chips.
- Pour batter into pan. Bake for 25-30 minutes, or until a toothpick comes out without any crumbs.
