Ingredients
Slaw
  • 4 cups shredded carrots
  • 1/2 cup golden raisins
  • 1/4 cup dry roasted cashews roughly chopped
  • 1/4 cup chopped green onions
  • 1/4 cup loosely packed cilantro chopped
Curry Yogurt Dressing
Instructions
  1. To make dressing, whisk together all ingredients, using water only if needed. Taste and adjust seasoning, adding more lemon juice or salt, if desired.
  2. In large bowl, combine shredded carrots, golden raisins, toasted pistachios, scallions and fresh cilantro.
  3. Serve immediately for best taste and texture.
