Instructions
  1. In mixing bowl, combine oats, coconut milk, pumpkin puree, chia and flax seeds, maple syrup, vanilla extract, pumpkin pie spice, cinnamon and salt; mix thoroughly.
  2. In separate bowl, combine chopped pumpkin seeds, dates and coconut flakes; mix together to form crumble topping.
  3. Into 6 glasses or recycled glass jars, divide oat mixture. Top each with crumble topping, cover and refrigerate.
  4. When serving, add dollop of yogurt and sprinkle of cinnamon.
