Ingredients
  • 1 cup cremini mushrooms sliced
  • 1/2 cup white button mushrooms sliced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 yellow onion diced
  • 3 garlic cloves minced
  • 1 can black beans drained
  • 1 can red kidney beans drained
  • 1 small sweet potato diced
  • 28- oz. can crushed tomatoes
  • 1 cup vegetable broth
  • 2 Tbsp. olive oil
  • 1 tsp. smoked paprika
  • 1 avocado optional
  • 1 sprig green onion sliced
  • 1 sprig rosemary
  • Salt & pepper to taste
Instructions
  1. Heat olive oil in large Dutch oven over medium heat. Add onion and sauté for 2 minutes.
  2. Add sweet potatoes and bell peppers. Cook for 2-3 minutes.
  3. Add garlic, mushrooms and beans. Mix well and cook for 1 minute.
  4. Add crushed tomatoes, vegetable broth, salt, pepper and rosemary sprig. Bring to boil for 2 minutes then reduce to simmer.
  5. Cook on low for 45 minutes to allow the flavors to come together. Serve with sour cream, cheese and green onions.
