Zucchini Bread Snack Squares

You’ve played hide-and-seek a gazillion times with your kids. They’re small enough to hide in your bathroom vanity, while you stand in a coat closet with your feet covered by knee-high boots. But this game is so much fun for everyone when you take it to the kitchen. Hiding a nutritious, green vegetable in these power-snack squares creates a surprisingly delicious flavor and cake-like texture. The best part is you only have to “play” one round, and you’ve got a hearty, after-school treat all week long!

Makes about 9 squares

Ingredients

1 cup shredded zucchini, measured with liquid already pressed out
1/4 cup melted allergy-friendly shortening
1 flax egg (1 Tbsp. Vitacost Flaxseed + 3 Tbsp. water)
2 Tbsp. water or dairy-free milk
1 tsp. vanilla
1-1/2 cups Enjoy Life Foods All-Purpose Flour Mix
1/2 cup quinoa flakes
1/2 cup cooked Vitacost Organic Quinoa
1 Tbsp. guar gum or 1/2 tsp. xanthan gum
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. Vitacost Organic Ground Cinnamon
1/2 cup Enjoy Life Foods Mini Chips

Toppings (optional)

1/4 cup Enjoy Life Foods Mini Chips
1/4 cup toasted pumpkin seeds
1/4 cup raw Vitacost Organic Whole Grain Amaranth

Directions

  1. Preheat oven to 350 degrees F and line an 9” x 9” baking dish with parchment paper.
  2. In a large bowl, add zucchini, shortening, flax egg, water/milk and vanilla. Mix until well combined.
  3. In a separate bowl, whisk together remaining ingredients.
  4. Add flour mixture to zucchini mixture and stir until well combined, about 1-2 minutes.
  5. Pour batter into prepared baking dish and sprinkle with toppings (if using).
  6. Bake 15 minutes, rotate dish and bake another 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool in pan before cutting into squares.
