10-Minute Turmeric Potato Pancakes

Few mornings are more precious than one spent alone with your special someone. Such a morning calls for a special breakfast—one made just for two that is crave-worthy without causing regret. (After all, you want to enjoy yourself without feeling guilty for it!) You’ll also want a recipe that doesn’t take too much time—the goal is to spend time with your sweetie, not sweat over the stove. So, give these potato pancakes a go! Made in 10 minutes with mouth-watering turmeric and topped with vegan sour cream, there’s no better breakfast for two to share.

Serves 2


Extra large organic potato, peeled and grated
1 Tbsp. extra virgin olive, coconut or tigernut oil
1 tsp. ground flaxseed meal
½ tsp. turmeric
¼ tsp. paprika
¼ tsp. cumin
¼ tsp. Redmond Real Salt
¼ tsp. black pepper
Dash of cayenne pepper


  1. In a frying pan over medium heat, add oil.
  2. In a bowl, combine grated potato with spices and flax meal.
  3. Add a handful to frying pan and cook on each side for 5 minutes or until golden brown and cooked through. Repeat for remaining potato.
  4. Serve with vegan sour cream.
