Say hello to shirataki noodles. These nifty noodles range from totally zero carbs and zero calories to a small amount. But they do allow you to come up with concoctions such as guilt-free macaroni and cheese and even a version of rice.

Shirataki is made from the soluble fiber of a plant called the Konnyaku Imo. The fiber is known as glucomannan. Just like with tofu, these noodles absorb the flavors of a dish. However, be sure to drain thoroughly. Then rinse the pasta in cold water for 10 to 15 seconds. Put in boiling water for a minute, then dry on a paper towel before using.
