30-Minute Gluten-Free Apple Crumble

Most homemade baked desserts that can be ready in 30 minutes come from a box. Not this one! With real, whole food ingredients like fresh apples, shredded coconut and organic cinnamon, you can create a crumble that’s not only an after-dinner delight but also healthy enough to sneak in for breakfast. Instead of the butter, sugar and flour used in traditional cobbler-style creations, this one calls for pure maple syrup for a sticky-rich, sweet apple filling and almond meal for a crumbly, gluten-free crust.

30-Minute Gluten-Free Apple Crumble

Serves 5

Ingredients

4 large apples, peeled, cored, and cut into pieces
1-1/2 cups almond meal
1 Tbsp. extra-virgin coconut oil
2 Tbsp. organic cinnamon
1/3 cup shredded coconut
5 Tbsp. maple syrup

Directions

  1. Preheat oven to 400 degrees F.
  2. In large pot, bring water to a  boil; add apples and cook until tender.
  3. In skillet over low heat, melt coconut oil; add 2 tablespoons of maple syrup, cinnamon, coconut and almond meal. Cook to toast the mixture. Remove from heat when lightly browned and set aside.
  4. Strain apples and return to pot. Add remaining maple syrup and cooking over medium-low heat until apples are softened.
  5. Transfer apples to an oven-safe dish, sprinkle with toasted mixture and bake for 10 minutes.
