These hearty muffins are best warm – even if you have to unwrap them on the run.
5 scoops (about 125 g) blueberry protein powder
2 ripe bananas
1/3 cup coconut sugar
1 tsp. vanilla extract
- Preheat oven to 350 degrees F and prepare a muffin pan with paper liners.
- In a large bowl, stir together all ingredients until smooth and well combined.
- Pour batter into muffin pan and bake 30 minutes, or until a toothpick comes out clean.
