Ingredients

Instructions

  1. Heat medium sauté pan (that has a tight-fitting lid) over medium heat. Sauté onion in olive oil 7 minutes.
  2. Add pressed garlic and stir in rice.
  3. Add chicken broth, coconut milk, salt, pepper and thyme. Bring to boil then cover and simmer 20 minutes. Once rice is cooked, add beans, stir, cover and cook 5 more minutes.
