Hazelnut Cookie Bites {no bake, vegan, gluten free}
Ingredients:
- ½ cup hazelnuts, soaked 8 hours (makes them easier to digest and blend better for bites)
- 2 Tbsp cacao nibs
- 2 Tbsp cacao powder
- 1 Tbsp coconut oil
- 1 Tbsp ground flaxseed
- 2 medjool dates, pitted and chopped
- 1 Tbsp raw honey
Method:
- Soak hazelnuts in water for 8 hours to soften them for the cookie bites. This makes them easier to digest as well.
- Add all ingredients to a food processor and blend until well combined.
- Scoop out batter by the tablespoon, roll into balls. Wet hands to make it easier to form balls.
Yields 9 cookie bites
