There’s a big holiday coming up! No, not St. Patrick’s Day (though it’s on the party-excuse checklist, too). March 14th marks the occasion known around the world as Pi day, a celebration of the mathematical symbol “π,” a number that starts with 3.14 (get it?) and goes on forever—much like our love for a different kind of pie. Nerdy or not, everyone can enjoy a slice of fun this Saturday. Make this paleo creation and you’ll be adored infinitely by everyone in your circle.
Paleo Strawberry Pie
Ingredients
Filling
4 cups sliced strawberries
1 cup organic honey
1 Tbsp. cinnamon
Crust
3/4 cup almond meal
3/4 cup coconut flour
1/2 cup coconut oil, liquid
1 Tbsp. unprocessed organic cocoa powder
1 tsp. raw honey
1/4 tsp. salt
Water as needed
Spray coconut oil
Directions
- To make filling, combine filling ingredients in baking dish and bake for 20 minutes at 350 degrees F.
- To make crust, combine crust ingredients in a bowl and add water 1 tablespoon at a time until it becomes a moist, spreadable. Spray 9” pie dish with coconut oil, then spread crust mixture into dish. Top with filling.
- Bake pie at 350 degrees F for 30 minutes or until crust becomes crispy.
