Ingredients
- 6-8 zucchinis sliced into rounds
- 1/4 cup avocado oil
- 1/4 cup nutritional yeast
- 1/4 cup almond flour
- Salt pinch
- Pepper to taste
- 1 egg beaten, optional
- Cayenne pepper optional
Instructions

In large mixing bowl, mix almond flour, nutritional yeast, salt and pepper and cayenne, if desired.

Add beaten egg and avocado oil.

Add zucchini rounds into mixture and coat well.

Line air-fryer with zucchini rounds. For extra crispiness, spray avocado oil on both sides. Choose “fry” setting or 400 degrees F for 7 minutes or until golden. Flip rounds to ensure both sides are crisp.
