Ingredients
- 2 cups canola oil for frying
- 10-12 discs empanada dough homemade or store bought
- 6 oz. goat cheese crumbled
- 3 gala apples or apples of choice, peeled, cut into 1/4 –inch cubes
- 1/2 stick salted butter
- 2 Tbsp. brown sugar plus more for sprinkling
- 1 tsp. cinnamon plus more for sprinkling
Instructions

In small, deep pot, heat 2 cups oil to 375 degrees F.

In sauté pan over medium heat, heat butter. Once melted, stir in brown sugar to combine. Add apples and cinnamon. Sauté 3-4 minutes until softened. Remove pan from heat.

To empanada disc, add about 2 tablespoons apple filling and some goat cheese crumbles. Fold in half and crimp edges to seal dough.

To fry pot with hot oil, carefully add small batches of empanadas (2-3 at a time) and fry about 60-90 seconds until golden brown. Repeat for all.

If desired, sprinkle cinnamon and sugar over finished empanadas.
