Ingredients
Garlic-ginger beef
- 1 tsp. avocado or olive oil
- 3/4 tsp. turmeric
- ½ tsp. cumin
- 2 cloves garlic, chopped small
- 1 scallion, white + greens, sliced thin
- 1- in. piece ginger, peeled & chopped small
- 2 tsp. jalapeno or other chili pepper, minced (optional)
- 12-16 oz. organic grass-fed ground beef
- Pink salt, to taste
- Black pepper, to taste
Cauliflower “fried rice”
- 1 tsp. avocado or olive oil
- 3/4 tsp. turmeric
- ½ tsp. cumin
- 2 cloves garlic, chopped
- 1 scallion, white + greens, sliced thin
- 1- inch piece ginger, peeled & chopped small
- 2 tsp. jalapeno or other chili pepper, minced (optional)
- 16 oz. cauliflower rice, fresh or frozen
- 1 large carrot, peeled & diced small
- 1 head broccoli florets only, stems removed & diced small
- Pink salt, to taste
- Black pepper, to taste
Instructions

Heat two separate medium pans over medium heat (one for rice, one for beef).

Pour oil into both pans followed by turmeric, cumin, garlic, scallion, ginger and jalapeno. Let cook for a minute or two until fragrant.
Cauliflower “fried rice”

Add broccoli to one pan and cook 1-2 minutes. Add cauliflower rice. Cover and cook, stirring occasionally, for about 5 minutes. Season with salt and pepper to taste.

Meanwhile, add beef to other pan. Use wooden spoon to break it up into large pieces so it evenly covers the pan. Cook 4-5 minutes to brown. Then, use spoon to break everything up and mix it around so the other side of the meat is in contact with the pan. Cook for 1 minute. Check that it is thoroughly cooked throughout. If not, give it a stir and let cook another minute or two as needed. Season with salt and pepper to taste.

To assemble bowl, spoon in cauliflower rice first, then add a serving of beef on top or on the side.
