Each bite is loaded with tender chicken, fresh avocado and an easy, homemade Mexican “crema.” The fresh cilantro and avocado-lime sauce bring light and refreshing flavors that perfectly complement the savory meat. Easy, filling and beyond delicious? Should we start celebrating “Burrito Monday?”

Avocado-Chicken Burritos with Mexican Crema

Ingredients

Instructions

  1. Preheat oven to 450 degrees F. In bowl, toss together chicken, olive oil and seasoning.
  2. Place chicken on baking sheet and cook 15-18 minutes or until chicken has reached 165 degrees. Chop and set aside.
  3. In bowl, mix together one avocado, 1/2 cup cilantro, sour cream, milk, lime juice, zest, salt and pepper until smooth. Chop second avocado and set aside.
  4. Over each wrap, spread about 2 tablespoons avocado cream and top with about 6 ounces of chicken, 1/4 cup cilantro and half of chopped avocado. Fold wrap.
