Eating out has its perks, but it can mean a long wait, an overpriced meal and a server who never refills your water. To save money and your sanity, invite your friends over and have dinner in the comfort of your own home. Not sure what to serve? Impress your guests with baked salmon steaks and roasted veggies. With the elegance of a restaurant-served meal but the convenience of staying in, this meal is a perk all on its own.

Ingredients
4 salmon steaks
12 oz. broccoli, cut into florets
14 oz. Brussels sprouts, stems trimmed
2-4 vine ripe tomatoes
Dressing
1/2 cup olive oil
1/4 cup honey
2 Tbsp. white balsamic vinegar
Juice of 2 lemons
1/4 tsp. pink salt
1/8 tsp. ground black pepper
10 sprigs fresh thyme or 1/2 tsp. dried thyme
Directions
- Preheat oven to 400 degrees. Line half sheet pan and glass baking sheet with parchment paper.
- In a small bowl, combine dressing ingredients. In large bowl, toss vegetables with half of dressing. Pour remaining dressing over salmon steaks to marinate before baking.
- Transfer veggies to sheet pan and roast 35-40 minutes or until tender and crisp. Remove from oven, sprinkle with a pinch of salt and cover with foil to keep warm.
- Place salmon steak on glass baking sheet and bake for 15-17 minutes or until flakes with a fork. Remove from oven and set aside for 5 minutes before serving.
