Balsamic Veggie Couscous Salad

If leafy greens leave you longing for more, this hearty (yet not heavy) salad is going to hit the spot. Crisp, colorful veggies come together with couscous  for a nutrient-packed, low-cal lunch or dinner side dish that’s as healthy as it is tasty. Toss with a tangy, homemade balsamic dressing and  add a sprinkling of low-fat feta cheese for extra flavor.

With only 5 calories per tablespoon, balsamic vinegar adds zesty flavor without negatively impacting your diet.

Balsamic Veggie Couscous Salad

Ingredients

1 cup couscous
1-3/4 cups water
1-1/2 cups carrots, grated
1 green pepper, diced
½ cup red onion, minced
½ cup cherry tomatoes
2 Tbsp. balsamic vinegar
2 Tbsp. olive oil
1 Tbsp. Dijon mustard
½ tsp. each salt and pepper
½ cup low-fat feta cheese, cubed

Directions

1. Follow package directions to cook couscous. Transfer to a large bowl.

2.  Add vegetables and mix well.

3. In small bowl, whisk together vinegar, olive oil, mustard, salt and pepper. Pour over couscous and veggie mixture.

4. Top with feta cheese and serve.
