Blueberry-Oat Protein Pancakes

When stress and worry begin to bubble up, it’s time to flip over. Not changing things will leave you overcooked – or worse, totally burnt. Not convinced? Take a cue from flapjacks. As soon as they start feeling the heat, bubbles burst in a clear sign of agitation. But the solution is simple: just grab a spatula. And if you really want to turn the day around, add blueberry flavor, a protein-powder frosting and coconut flakes. You’ll quickly learn that these pancakes are wise beyond the whisk.

Pancakes

2-1/4 scoops (about 100 g) blueberry protein powder  
1/3 cup oat flour (or rolled oats, finely ground)
1 egg white
1 cup water

Frosting

1/2 scoop blueberry protein powder
2 Tbsp. water

Toppings

Coconut flakes
Dried blueberries

Directions

  1. In a medium bowl, mix together all pancake ingredients, adding water gradually until batter has a thick but smooth consistency. Note: You may need more or less than 1 cup water, so add slowly!
  2. Heat a pan or griddle over medium. Using a ladle or big spoon, scoop batter onto heated pan.
  3. Cook pancakes until bubbly, flip and cook until golden.
  4. Repeat until all batter is cooked, making about 5 small pancakes.
