Blueberry-Spirulina Chia Parfait

Is your breakfast rut giving you the blues? Chase them away with this vibrant blueberry chia parfait. Just like a classic parfait, this one is loaded with fresh fruit and creamy yogurt, but we recommend coconut-milk-based yogurt for a dairy-free version with a tropical twist. You’ll boost this parfait with nutrient-rich superfoods chia seeds and spirulina powder, the latter of which adds the bright blue hue. Dig in!

Blueberry-Spirulina Chia Parfait

Ingredients

Bottom layer

Middle layer

  • 6 oz. blueberry coconut milk yogurt or preferred blueberry yogurt
  • ½ tsp. blue spirulina
  • 4 tsp. chia seeds

Top layer

  • 6 oz. plain coconut milk yogurt or preferred yogurt
  • 1 cup fresh blueberries

Instructions

  1. Directions
  2. In small bowl, stir together bottom layer ingredients. Spoon half into each serving container and refrigerate.
  3. In clean small bowl, stir together second layer.
  4. Refrigerate both bottom and second layers for at least 4 hours until thick.
  5. Once thick, divide second layer between serving containers, on top of bottom layer.
  6. Top each with 3 oz. plain yogurt. Finish each with ½ cup fresh blueberries on top.
  7. Serve immediately or store refrigerated and eat within 2 days.
