Ingredients
- 4 cups bread flour
- 1 Tbsp. Himalayan pink salt
- 1-1/2 Tbsp. active dry yeast
- 1-1/4 cups warm water around 100 degrees F
- 2 Tbsp. vegan butter melted, for brushing
Instructions

In measuring cup, combine 1/2 cup warm water and yeast; let sit 10 minutes.

In bowl of electric mixer, combine flour, salt, yeast mixture and remaining water.

Knead dough on speed setting 2 for 7 minutes, or until dough is smooth and not sticky. Cover with damp kitchen cloth and let sit 1 hour or until doubled in size.

Preheat oven to 325 degrees F. Line baking sheet with parchment paper.

Punch dough down and cut into 12 equal pieces, one piece for each bunny roll.

Working quickly, separate each of the 12 pieces into 4 pieces: a bigger piece for body, slightly smaller piece for head and 2 tsp. each for 2 bunny ears. Roll body and head into balls and roll ears into elongated oval balls. Assemble bunnies on baking sheet by pressing elements together. Brush with melted butter. If desired, decorate with peppercorn eyes and diced onion nose.

Bake 20 minutes or until golden brown. Allow to cool slightly before transferring to cooling rack.
