Makes 20 cookies

Ingredients

1/2 cup Vitacost Organic Light Brown Sugar
1/2 cup ghee, at room temperature
1 egg
1 cup Vitacost Almond Flour
1 cup oat flour
1 scoop ARO Vanilla Whey Protein Complex PLUS
1/4 tsp. baking powder
5 dates, each cut into 4 pieces (20 total)

Directions

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a large bowl, add ghee and brown sugar. Use a hand mixer to combine.
  3. Add egg and beat until mixture becomes light and fluffy.
  4. Add flours, protein powder and baking powder. Stir until well combined. Refrigerate cookie dough for at least 30 minutes.
  5. Using a spoon or your hands, roll about 2 tablespoons cookie dough into a ball. Place 1 date piece in the center of your ball, and work the dough around it. Place cookie ball on prepared baking sheet and flatten slightly. Repeat until all dough is used, about 20 cookies.
  6. Bake 10-12 minutes, or until just beginning to crisp.
  7. Cool slightly before serving.
