You were at least a tad bit terrified before your first roller coaster ride. But when the car came to a halt and the safety bars lifted, you felt like a champ. That day, you learned some things seem scarier than they actually are – like making caramel apples. They look like an intimidating endeavor, one only master bakers or candy crafters can conquer. Not true. If you can boil water, you can cook up this two-ingredient caramel sauce. Add crushed nuts and spook someone else with your newfound skills.
Apples
6 skewers
6 green apples
1/3 cup macadamia nuts, crushed
Caramel
1 cup canned coconut milk
1 cup coconut sugar
Directions
- Prepare a baking sheet with parchment paper and set aside.
- Poke a skewer through the middle of each apple and on parchment-lined baking sheet.
- In a saucepan over high heat, bring caramel ingredients to a boil. Let boil 10 minutes. Reduce heat and simmer for 5 minutes. Caramel should begin to thicken.
- Coat apples with caramel and return to parchment-lined baking sheet. If desired, spoon another layer or two of caramel sauce over apples to create a thicker coating.
- Sprinkle crushed macadamia nuts over caramel apples. Let cool before serving.
