Cheerful Chocolate Peppermint Cups

Ingredients

Instructions

  1. Line muffin tin with silicone muffin cups.
  2. In microwave-safe bowl, combine semisweet chocolate chips and 1 Tbsp. coconut oil. Microwave about 1 minute and 15 seconds. Stir until smooth.
  3. Pour melted chocolate into muffin cups, filling to about 1/8-inch. Distribute chocolate evenly into each cup.
  4. Place in freezer 30 minutes.
  5. In microwave-safe bowl, combine white chocolate chips and 1 Tbsp. coconut oil. Microwave about 1 min and 15 seconds. Stir until smooth.
  6. Pour melted white chocolate into muffin cups, distributing evenly.
  7. Top with crushed peppermint candies.
  8. Freeze at least 30 minutes.
  9. Store in refrigerator.

Tips:

  1. Chocolate can also be melted in double broiler, if preferred.
  2. For added crunch, stir crushed peppermint candies into melted chocolate as well as sprinkling on top.
