If you have some extra time, you should kill it with a treat. In fact, making this protein fudge will actually save you time later in the day. When you’re starving and need a quick, healthy snack, these chocolate squares won’t let you down. The copious amounts of protein will, indeed, pick you up. Meanwhile, the decadent almond pieces will stop you dead in your hunger tracks. Filling, sweet, crunchy and gooey? It’s the kind of snack you live for!

Chocolate Almond Protein Fudge

Ingredients

4 scoops chocolate protein powder
2 Tbsp. almond flour
2 Tbsp. almond butter
2 Tbsp. honey
1 Tbsp. coconut oil
¼ cup almond milk (give or take)
½ cup chopped almonds

Directions

  1. Coat an 8” x 8” baking dish with coconut oil and set aside.
  2. In a large bowl, add all ingredients (except chopped almonds), stirring until smooth and well combined. Note: You may not need ¼ cup of milk, so pour slowly and stir until you’ve reached a fudgy consistency.
  3. Fold in chopped almonds until well incorporated.
  4. Spoon fudge mixture into greased baking dish, pressing down to even out. Top with more almonds, if desired.
  5. Set in freezer until solidified.
