Chocolate Bundt Cake with Peanut Butter Frosting

It’s a bund-t cake! Though this distinctive-shaped dessert has a big hole in the center, it’s not missing a thing. In fact, it’s so rich you’ll have to share ““ making it perfect for birthdays, bar mitzvahs and bachelorettes. The moist, triple-chocolate cake will melt hearts, while the peanut butter lava spewing over the edges is just a nice finishing touch.

I made this for a friend’s birthday. If you don’t have a celebration coming up, just assume it’s somebody’s birthday, somewhere. Yeah…it definitely is.

Chocolate Bundt Cake with Peanut Butter Frosting

Ingredients

1 ¼ cup oat flour
½ cup cocoa powder
4 scoops chocolate protein powder
½ cup coconut sugar
½ cup dark chocolate chips
¼ cup coconut oil, melted
2/3 cup almond milk
1 tsp. baking powder
1 tsp. vanilla
2 eggs
pinch of salt

Frosting: 1 cup creamy peanut butter and   ½ cup almond milk mixed completely. If this isn’t enough to cover your cake, make more frosting by combining 2 parts peanut butter to every 1 part almond milk. Enjoy experimenting, here.

Directions

In a large bowl, mix all ingredients except chocolate chips.

Once thoroughly blended, fold in chocolate chips.

Bake at 350 for about 20 minutes, or until it passes the toothpick test.

Let the cake cool before frosting.
