While you want the convenience of a grab-and-go snack — especially after a morning workout — your sophisticated palate deserves better. Next time, turn “this will do” into “that was easy!” with these sinfully delicious protein bars. They’re practically cousins of the classic oatmeal cookie, except for the fact that this chocolaty, home-baked treat actually performs. Recovery is pretty sweet, after all.
Chocolate Chip Oat Protein Bars
Ingredients
1/3 cup oat flour
3/4 cup oats
3 scoops vanilla cupcake protein
1/2 cup coconut sugar
1/3 cup coconut oil
2 Tbsp. ghee
1/2 tsp. baking soda
pinch of salt
1 tsp. vanilla
1/4 cup almond milk
1 bag chocolate chips
Directions
- Preheat the oven to 350 degrees F and coat an 8×8 baking pan with non-stick cooking spray.
- In a large bowl, mix the flour, oats, protein powder, sugar, baking soda, salt and vanilla. Stir until combined.
- Add the coconut oil, ghee and almond milk and mix well. Add additional milk if too dry.
- Stir in the chocolate chips and press mixture into the pan evenly.
- Bake for 15 minutes and allow to cool slightly, cut and serve.
