Chocolate Chip Zucchini Muffins (Gluten-Free & Vegan)

If you had even a nickel for every time your mom told you to eat more greens, you’d never want for anything ever again. Unfortunately, no such luck. Still to this day, you struggle to get enough vegetables on your plate. At least that was the case until you discovered how easy – and delicious – it is to inconspicuously add zucchini to your breakfast rotation. These secretly healthy chocolate chip muffins ensure that you start your day rich in nutrients — and that’s worth more than money.

Chocolate Chip Zucchini Muffins

Chocolate Chip Zucchini Muffins (Gluten Free & Vegan)

Ingredients

1 cup gluten-free all-purpose baking flour
½ tsp. gluten-free baking powder
½ tsp. sea salt
1 Tbsp. ground flax + 3 T. water, stir and set aside
1 cup finely grated zucchini
¼ cup coconut oil
½ cup turbinado sugar
¼ cup water
1 Tbsp. raw apple cider vinegar
¾ cup mini chocolate chips

Directions

  1. Preheat oven to 350 degrees F and prepare a muffin pan with paper liners.
  2. In large bowl, combine flour, baking powder and sea salt.
  3. In a small bowl, combine, flax egg, grated zucchini, coconut oil, sugar, water and apple cider vinegar.
  4. Pour wet ingredients into dry and stir until well combined.
  5. Fold in chocolate chips.
  6. Scoop 2-3 tablespoons batter into each muffin cup.
  7. Bake 25-30 minutes.
