These secretly healthy chocolate chip muffins ensure that you start your day rich in nutrients — and that’s worth more than money.
Chocolate Chip Zucchini Muffins (Gluten Free & Vegan)
Ingredients
1 cup gluten-free all-purpose baking flour
½ tsp. gluten-free baking powder
½ tsp. sea salt
1 Tbsp. ground flax + 3 T. water, stir and set aside
1 cup finely grated zucchini
¼ cup coconut oil
½ cup turbinado sugar
¼ cup water
1 Tbsp. raw apple cider vinegar
¾ cup mini chocolate chips
Directions
- Preheat oven to 350 degrees F and prepare a muffin pan with paper liners.
- In large bowl, combine flour, baking powder and sea salt.
- In a small bowl, combine, flax egg, grated zucchini, coconut oil, sugar, water and apple cider vinegar.
- Pour wet ingredients into dry and stir until well combined.
- Fold in chocolate chips.
- Scoop 2-3 tablespoons batter into each muffin cup.
- Bake 25-30 minutes.
