Chocolate-Espresso Chia Pudding

  1. In large bowl, mix all ingredients except for coconut cream. Set aside for 20 minutes and mix again until pudding thickens.
  2. Portion half the pudding between two small mason jars. Add a dollop of coconut cream into each jar.
  3. Layer remaining pudding and coconut cream. Top with a drizzle of chocolate sauce if desired.
  4. Refrigerate 2-4 hours to firm up before serving,
