Chocolate Walnut Brownies with Avocado Icing

It would be nice if dinner could go off without a hitch. But with plenty of appetites, diets and temperaments to appease in your busy household, you’ve got your work cut out for you. At least you can take dessert out of the equation with this simple, no-bake recipe. Rich, chocolaty walnut brownies with sweet, creamy avocado icing will delight even the pickiest eaters at your table. Bonus? You get that extra level of comfort that comes from knowing you’re feeding your crew a nutrient-dense dish.

Serves 12

Ingredients

Brownies

1-1/2 cup walnuts
1 cup dates, seeded
1/4 cup pHresh Products Cacao Powder
1 Hu Simple Dark Chocolate Bar (can use any flavor or HU chocolate bars)

Frosting

2 avocados
1/2 cup maple syrup
1/4 cup pHresh Products Cacao Powder
2 Tbsp. Nutiva Coconut Oil with Buttery Flavor
1 tsp. vanilla extract
1/8 tsp. Redmond Real salt

Directions

  1. Prepare brownies. In a food processor, combine all ingredients except for chocolate bar until moist. Break chocolate bar into small pieces and mix with brownie batter. Transfer to baking dish and refrigerate.
  2. Prepare frosting. In a blender, combine all ingredients until smooth and creamy.
  3. To serve, frost brownies and cut into 12 pieces.

Liana’s tip: Serve with fresh strawberries or raspberries on top.
