Ingredients
Shrimp
- 1 lb. shrimp
- 2 Tbsp. Redmond Real Salt Organic Natural Season Salt
- 1 Tbsp. Nutiva MCT Oil
Strawberry Salsa
- 2 cups tomatoes diced (about 6 large tomatoes)
- 1½ cup organic strawberries chopped
- ½ red onion diced
- 1 jalapeno finely chopped
- 2 Tbsp. lime juice
- 1 tsp. minced garlic
- ¼ tsp. cumin
- ¼ tsp. Redmond Real Salt
- ¼ tsp. black pepper
Wraps
- 8 leaves lettuce
- 1 small lime
- ½ red onion sliced or diced
- ½ cup cilantro
Instructions

Prepare salsa in mixing bowl. Combine all fruits and vegetables and stir in lime juice and spices.

In a medium pan, heat MCT oil. Cook shrimp for a few minutes on each side. Season with season salt.

Assemble wraps. Add shrimp to lettuce cup, squeeze on lime juice and add strawberry salsa, red onion and cilantro. Serve immediately.
