This flavorful salmon salad uses good-for-you avocado instead of mayonnaise and packs in a cup of veggies, adding nutrients and a bit of crunch. If you’re not sure that salmon is the right substitute for tuna, try out this salad and soon you’ll agree: there are plenty of fish in the sea.
Makes 1-1/2 cups
Ingredients
1 can (6 oz.) salmon, boneless and skinless
1/4 cup avocado
1/2 cup celery
1/2 cup carrots, peeled
2 Tbsp. cilantro (leaves and stems included)
1 Tbsp. fresh lime
1/4 tsp. pink salt
1/4 tsp. black pepper
1/4 tsp. garlic powder
Directions
- In food processor, combine all ingredient. Pulse until your reach desired texture.
- Serve on gluten-free bread or in lettuce cups. Or enjoy with crackers, pita bread or homemade sweet potato chips.
