The base of this bundt cake, for instance, is a whopping five scoops of protein powder and gluten-free coconut flour. So even if it’s technically time for breakfast, you won’t get scorned for eating dessert. See? You find so much when you step out of your shell.

Ingredients

5 scoops (about 125 g) vanilla protein powder
1/4 cup coconut flour
1/4 cup granulated sugar
1/3 cup unsweetened applesauce
1 cup unsweetened almond milk
1 egg
1/8 cup coconut flakes

Directions

  1. Preheat oven to 350 degrees F and coat a bundt cake with coconut oil or non-stick cooking spray.
  2. In a large bowl, combine all ingredients and stir until batter is smooth.
  3. Pour batter into prepared bundt pan and bake about 30 minutes, or until a toothpick comes out clean.
  4. Top with more coconut flakes, if desired, and slice when ready to eat.
