You start out the week with a clear meal plan. You’ve got designated meals on designated days. But some days, whether it’s because of the smell of a coworkers lunch or an ad on TV or in a magazine, cravings strike! You find yourself with an overwhelming desire to eat chicken tenders, one of your childhood favorites. But, since you’re no longer seven years old, you avoid the heavy-breaded strips because it’s not good for your stomach—or your waistline. But this paleo, grownup version is just what you need to satisfy your appetite. And it takes less than 30 minutes to make!
Ingredients
1 lb. organic chicken breast, cut into tender strips
1/2 cup coconut flour
1/2 tsp. pink salt
1/2 tsp. garlic powder
1/4 tsp. black pepper
Directions
- Preheat oven to 450 degrees F.
- In medium bowl, mix together coconut flour and spices. Toss chicken strips in mixture to coat. Shake off excess flour and place in even layer onto baking pan.
- Bake 25 minutes, turning once halfway through cooking. To be sure chicken if fully cooked, check that juice are no longer pink.
- Serve warm with sweet potato wedges and cultured ketchup.
