  1. In small mixing bowl, combine instant coffee, coconut sugar and hot water. Using hand mixer, beat a few minutes, until very thick and fluffy.
  2. In cup, stir together milk and collagen until well combined. Mix in ice cubes.
  3. Pour whipped coffee on top; stir together or drink as is.
