Instructions

  1. Pat chicken dry, coat with olive oil and season with salt and pepper.
  2. Heat skillet over medium-high heat with olive oil. Sear chicken skin-side down for 3-4 minutes until browned then flip and cook for another 2-3 minutes. Remove from pan.
  3. Sauté onion with pinch of pepper for 2 minutes. Add garlic and chipotle peppers and cook for 2 more minutes.
  4. Stir in chicken broth, cream cheese and adobo sauce. Cook until smooth.
  5. Preheat oven to 425 degrees F. Return chicken to pan and bake uncovered for 8-10 minutes.
  6. Remove skillet from oven. Strain sauce, discarding solids for smooth creamy finish.
  7. Serve over white rice with fresh cilantro.
