Ingredients
- 4 chicken thighs
- 1/2 white onion chopped
- 4 garlic cloves minced
- 3/4 cup chicken broth
- 1/4 cup cream cheese
- 3 chipotle peppers minced
- 1 Tbsp. adobo sauce
- sea salt and pepper to taste
- olive oil
Instructions

Pat chicken dry, coat with olive oil and season with salt and pepper.

Heat skillet over medium-high heat with olive oil. Sear chicken skin-side down for 3-4 minutes until browned then flip and cook for another 2-3 minutes. Remove from pan.

Sauté onion with pinch of pepper for 2 minutes. Add garlic and chipotle peppers and cook for 2 more minutes.

Stir in chicken broth, cream cheese and adobo sauce. Cook until smooth.

Preheat oven to 425 degrees F. Return chicken to pan and bake uncovered for 8-10 minutes.

Remove skillet from oven. Strain sauce, discarding solids for smooth creamy finish.
