Ingredients
Strawberry-Pineapple Salsa
Chile-Lime Sauce
- 1 cup full-fat Greek yogurt
- 1 4 oz. can green chiles
- ½ jalapeño minced, seeds removed
- ¼ cup lime juice
- ½ tsp. salt
- 1 tsp. garlic powder
- ½ tsp. pepper
Crispy Fish Fillets
- 3 eggs
- 1-½ cups panko breadcrumbs
- 1 tsp. salt
- 1 tsp. garlic powder
- ¼ tsp. pepper
- 6 fish fillets cod or tilapia
Instructions

Preheat oven to 375 degrees F. Line sheet pan with parchment paper.

In large serving bowl, stir together salsa ingredients. Refrigerate.

In medium serving bowl, whisk together sauce ingredients. Refrigerate.

In large mixing bowl, whisk eggs until smooth.

On large, flat dish, mix together breadcrumbs, salt, garlic powder and pepper.

Dip each fish fillet in egg, then breadcrumb mixture, and arrange in baking dish. Repeat for all fillets.

Bake 16-18 minutes, or until coating is golden and crispy.

Place halved fillets in taco shells and top with salsa and sauce.
