Ingredients

  • 2 cucumbers peeled, seeds removed and chopped
  • 2 medium avocados peeled and pitted
  • 1 small garlic clove
  • 1-2 tsp. apple cider vinegar
  • 1 small shallot
  • 1/4 cup fresh cilantro and fresh dill
  • 1/2 cup cold water
  • Salt to taste
  • Pepper to taste
  • 1-2 tsp jalapeño optional

Garnish

Instructions

  1. Add all ingredients (except pine nuts and mint) to high-speed blender. Blend until completely smooth and creamy.
  2. Taste and adjust seasoning with more salt, lime juice or herbs as needed.
  3. Chill for at least 30 minutes before.
  4. Garnish with your favorite toppings.
