Dark Chocolate Chip Muffins
Ingredients
1 1/2 cups oat flour
1/3 cup coconut sugar
1 tsp. vanilla extract
1 tsp. baking powder
1/4 cup plain Greek yogurt
1/2 cup almond milk
1 egg
1 package dark chocolate chips
- Preheat oven to 350 degrees F. Prepare a muffin pan with non-stick baking spray or paper muffin liners.
- In a large bowl, mix together all ingredients until well blended. (Leave a few chocolate chips for topping.)
- Pour batter into prepared muffin pan, filling up each cup about two-thirds full.
- Sprinkle reserved chocolate chips on top and bake about 20 minutes, or until a toothpick comes out clean.
- Allow to cool slightly before digging in!
